This micro-lot of 100% Castillo beans is grown in the Santa Monica farm, Quindio, Colombia, by the evergreen Jairo Arcila. This incredibly unique multi-stage fermentation shines through in the cup, with bright and juicy fruitiness matched by funky sweet chocolate aromatics. Because of the unique process, this coffee appears to be a dark roast, but we assure you it is not.



100% Single Origin Arabica Beans

The beans are dry anaerobic fermented for 24 hours before being placed in grain-pro bags for 60 hours at temperatures below 22 degrees Celsius, followed by 72 hours of freezing. This ice fermentation process allows flavours to develop for a prolonged time, resulting in a mellow texture while amplifying its fruitiness and adding liquorish and cocoa notes.

These specially selected micro-lot beans are packed full of rich acidity and complex notes, with exceptionally prominent aroma, making them ideal for those who enjoy higher acidity.

Natural Ice Fermentation Processed and Medium Roast

It is suitable for a variety of brewing methods, including cold brew, pour-over, and more. For the best experience, it should be ground accordingly to the brewing method used.
